The history of the Konchoshvili wine cellar dates back to 1737, when Kakhaber Konchoshvili, the treasurer (Inokh) of King Teimuraz II of Kakheti, founded a cellar where traditional Kakhetian wines and chacha were produced and sold. This cellar operated until the end of the 20th century, first in the village of Sabue and later in Kvareli.

The vineyards are planted in areas where the Duruji River once flowed; therefore, these locations are very rich in black shale content, while at a depth of 8-10 meters, there is a high concentration of carbonates.
