The bubbles in sparkling wine come from the carbon dioxide of fermentation, kept in the bottle. With the traditional method the wine ferments a second time in the bottle and ages on its lees for years. Pét-nat is made the oldest, natural way — the wine is bottled before fermentation ends, so it is fruitier and more lively.
