The secret of ice wine and late harvest wine is grapes left on the vine much longer than usual. Over time the berries lose water while their sugar and aroma concentrate. For classic ice wine the grapes are picked and pressed frozen — the ice stays in the berry and only a thick, sweet juice runs out.

The result is a rich, sweet wine with lively acidity and notes of honey, apricot and dried fruit. It goes well with desserts, cheese and fruit, or can be the dessert itself. Serve well chilled, in small glasses.
