Saperavi — Georgia's leading red wine

Saperavi is the only red wine in our draft range. It is Georgia's leading red grape, and it stands out worldwide for another reason too: even its juice is red — most grape varieties have colourless juice.

Taste and aroma

The colour is dark and deep. Berry fruit leads the aroma — blueberry, blackberry, sweet cherry. The wine is dry, full-bodied, with balanced acidity. Alcohol 13.5% — the highest among our draft wines.

Saperavi is one of those wines that opens up in the glass over time. If you have a moment, pour it and wait ten minutes or so.

How it is made

After pressing, the must, skins, seeds and stems go together into a clean qvevri, where natural fermentation begins.

During fermentation the qvevri is stirred four times a day — work done by hand, and essential for an even, thorough fermentation. The cap of skins that rises to the surface has to be pushed back into the juice, otherwise the wine cannot take on its colour and aroma.

About the grape

Saperavi is Georgia's leading red grape and one of the world's rare varieties with red juice. That is where the name comes from — saperavi means "dye". It is why Saperavi wine has a depth of colour other varieties cannot reach. Saperavi also ages well, and the best examples last for decades.

Serving and storage

Serve at 16–18°C. That is slightly below room temperature — in summer, put the bottle in the fridge for 20 minutes before serving.

Once poured, it keeps its character for 4–5 days in the fridge in a tightly closed container. A full container keeps longer than a half-empty one.

Is Saperavi a dry wine?

This version is, yes — completely dry.

Why is the qvevri stirred four times a day?

During fermentation the skins rise to the surface and form a "cap". If it is not pushed back down, the juice loses contact with the skins and the wine does not get its proper colour, tannin and aroma.

How long does it keep once poured?

In the fridge, in a tightly closed container, 4–5 days. Red wine changes a little faster in contact with air than white.
